Here’s a tasty replacement for a summertime favorite

Cauliflower Potato Salad

   

2 cups 

 

cauliflower florets

hard boiled eggs, diced

1/4 tsp 

 

onion powder

1 Tbs 

 

Dijon mustard

3 Tbs 

 

mayonnaise, low fat

Cook cauliflower in microwave until soft, but not mushy. DRAIN WELL. Let cool and cut into small pieces. Mix with other ingredients. Chill 2 hours and serve.

Like regular potato salad, this needs to be chilled to minimize bacterial growth.

Yield: 1 fluid ounce (2.2 g protein)

5 tsp. skim milk¹

1 tsp. Cream of Wheat cereal

1 tsp QualityPro instant protein powder

 In a 1-cup size microwave-safe cup, whisk dry ingredients into milk until blended. Microwave for 20 seconds on high. Whisk until smooth

Yield: 6 fluid ounces (20 g protein)

6 fl. oz. skim milk¹

1 packet tomato soup mix

2 packets (14 g) QualityPro instant protein powder

 In a 2-cup size microwave-safe cup, microwave skim milk on high for 80 seconds. Whisk in remaining ingredients until blended. Microwave again for 10-20 seconds on high. Whisk until smooth.

Yield: 2 fluid ounce (9.2 g protein)

3 TBSP. + 2 tsp skim milk¹

1 TBSP. Minnehaha Mills sugar-free pudding mix

1 packet (4 tsp.) QualityPro instant protein powder

 In a 1-cup size bowl, rapidly whisk all ingredients into skim milk. Continue whisking for 2 minutes or until smooth. Refrigerate.

Yield: 1 ounce (2.5 g protein)

1 TBSP + 1 tsp potato flakes

2 TBSP skim milk¹

1 tsp. QualityPro instant protein powder

½ tsp Molly McButter (1 packet)

 In a 1-cup size microwave-safe cup, microwave milk for 25 seconds on high. Stir in remaining ingredients. Whisk rapidly until smooth.

5 tsp. skim milk¹

2 tsp. instant oatmeal

1 tsp QualityPro instant protein powder

 In a 1-cup size microwave-safe cup, whisk dry ingredients into milk until blended. Microwave for 15 seconds on high. Whisk until smooth.

Yield: 1 fl. oz. (4 g protein)

¼ cup corn flakes

1 fl. oz. skim milk¹

2 tsp. QualityPro instant protein powder

 Crush corn flakes to a coarse powder. Add milk and instant protein powder. Stir. Let stand 5 to 10 minutes to soften.

Yield: 8 fl oz. (28 g protein)

1 pouch (28 g) QualityPro Beverage mix (Chocolate, Strawberry, or French Vanilla)

8 fl oz skim milk¹

 Add milk and beverage mix to shaker or large glass. Shake or stir until well blended.

Yield: 6 fl. oz. (11 g protein)

1 pouch  (28 g) QualityPro Broth mix (beef or chicken)

2/3 cup (6 fl oz) boiling water

 Slowly add Broth mix to water using vigorous whisking action. Stir until dissolved.

2 TBSP. Phagia® Pea Puree

1 packet Molly McButter

2 TBSP boiling water

 In a small cup, whisk dry ingredients into water until smooth.

Yield: 1 fl. oz.

4 1/2 tsp. Phagia® Corn Puree

1 packet Molly McButter

2 TBSP boiling water

 In a small cup, whisk dry ingredients into water until smooth.

Yield: 8 fl oz (26 g protein)

6 fl oz skim milk¹

1 packet QualityPro Chocolate Mix

1/2 ripe banana

 Place all ingredients into blender. Cover and blend until smooth

Yield: 8 fl oz. (26 g protein)

6 fl oz skim milk¹

2 fl oz orange juice concentrate

1 packet QualityPro French Vanilla mix

Place all ingredients into blender. Cover and blend until smooth

   ¹Lactose-reduced skim milk or soy milk may be substituted for skim milk. For soy milk, subtract 3 grams protein per 8 fl. oz.
